SMOKED STEELHEAD TROUT

Smoked steelhead trout is a fun, easy, and tasty way to prepare your trout. This recipe works great with salmon and other species of trout as well.

What you will need...

-2 steelhead fillets

-Medium to large sized tupperware

-Kosher Salt (coarse)

-Dark Brown Sugar

-Coarse Ground Black Pepper

-Maple Syrup (optional)

-Smoker or grill

-Hardwood chips or pellets for smoking

Step 1

Cut your fillets into small pieces approximately 2"x 6"

Step 2

Mix 2 cups dark brown sugar, 1/2 cup of coarse kosher salt, and 1 TBSP of coarse ground black pepper. Then line bottom of tupperware with the mixture approx. 1/4-1/2" thick

Step 3

Cover the mixture with 1 layer of fillets

Step 4

Cover 1st layer of fillets with another layer of the mix

Step 5

Add a 2nd layer of fillets to the tupperware

Step 6

Cover 2nd layer of fillets with another layer of the brown sugar/salt/pepper mix. Repeat this process (steps 2-5) until you run out of fillets or room in your tupperware. Once you are done put on a lid and let sit in the fridge overnight.

Step 7

Remove your container from the fridge and drain the excess mix from your fillets. Then rinse the fillets with cold water. After they are rinsed let fillets air dry for an hour.

Step 8

Now your fillets are ready to be smoked. If you'd like a sweeter flavor to your trout, brush both sides of the fillets with maple syrup. Prepare your smoker or grill with coals and whatever hardwood you prefer for flavor. I like hickory the best.

Step 9

Smoke for 2-3 hours at a temperature of 200F. If using charcoal place fillets away from direct heat. Add woodchips as needed throughout the process. When done the pieces should be firm throughout the fillet.

Step 10

Remove your trout from the grill or smoker. It is now ready to eat
